Last Minute Pumpkin Bites with Cocoa Pebbles


BOO! I don’t know about you, but when I think about Halloween, I think of chocolate and sweet treats galore. This year, we celebrated Halloween a little bit earlier and went on a pub crawl in Montrose. So we’re staying in tonight with a bowl of our favorite snacks and watching our favorite scary movies. As I’m prepping for movie night, I decided to whip up a quick Halloween treat that took me less than an hour to make! One of the best parts is that you can customize it with whatever your spooky heart desires. Here’s a quick recipe to make these super adorable pumpkin bites with Cocoa Pebbles!

  • 1 (12 oz) pack of small or large marshmallows
  • 4 cups of Cocoa Pebbles
  • Cupcake icing of whatever color you want your pumpkins to be
  • Gel food color for the stem
  • 1/4 stick of butter
  • Edible Glitter

First, spray your baking sheet or the container you wish to use to let the treat settle with any non-stick spray and set it to the side so it’s ready to go once you’re done heating up all of the ingredients. Turn your oven dial to low and melt your butter until it’s 3/4 of the way melted. Once it’s there, you want to just dump the bag of marshmallows in the saucepan and allow them to melt 3/4 of the way as well. Stir occasionally so they don’t overcook! Start pouring your Cocoa Pebbles in the saucepan, 2 cups at a time. Finally, once it’s completely mixed, just pour the mixture into the sheet and let it settle for 30-40 minutes. Once it’s settled and cooled, form your treats into little pumpkin bites!

The decorating part is pretty easy and totally up to you on what colors and patterns you want to use. Since these are last minute treats for the next intimate gathering you’re having or just for you and your boo (my attempt at a Halloween pun, haha) they don’t have to be super clean and perfect. Just have fun with them and before you know it, you’ll find the look that you’re going for. Of course, in true Nancy Sparkles fashion, I added a few sprinkles of edible glitter to some of the pumpkins to glam my little treats up.
